My parents and my husband have all said they hate guacamole. I would too if I had only ever eaten mushy store bought guac. Then they all experience fresh guacamole made at Rosa Mexicano and they licked the bowls clean. Total guacamole converts.
A few weeks ago my mother asked me to teach her how to make guacamole and she was surprised at how easy it is to make. Now she’s a guacamole making momma!
2 avocados (they should feel a bit soft when you squeeze them, here’s a few tips)
1 tomato (I prefer the ones on the vine)
1 yellow or white onion
1 chili pepper (take the seeds out if you don’t want heat)
1/2 a lemon
salt (to taste)
Suggested tool to use: Potato Masher It will really make this easy
How to make it:
Chop everything but the lemon and toss all into a bowl. Use a potato masher or a big slotted spoon to mix it up to your liking (I like mine with a bit of chunkiness to it). Once it’s mixed, squeeze half a lemon over it and then add salt to taste. You’ll realize the salt really brings out the flavor of it all. It’s kind of amazing. Try not to eat it all while standing over the bowl and reserve some for your friends and family.
Whenever avocados are on sale, I have to make guacamole. It’s too good to resist. Seriously.
